Whole Wheat Vegan Brownies

From scratch. Pre-heat oven to 325-350

Okay, first off, there are some things I would do differently next time, so I have included those modifications in the recipe. Please note again that I do not measure things, so the amounts are approximate at best. This is loosely based on the brownies recipe from the ppk (see link to right)

1/3 C Soft white wheat
1 12 oz. Mori-Nu silken tofu
1/2 C water

Blended on high in Vita-Mix until thick. (the alternative would be to use WW flour, blend and heat in a pan until thick). Then Add:

1 C Sunspire grain sweetened chips
1 3/4 C Maple syrup (to taste-should be really sweet)
2 tsp vanilla

blended together. Allow to cool (2 min if using Vita-Mix, longer if you had to use a stove), then add:

1/3 C oil

Seperately, Mix:

1 1/4 C Soft White Wheat (or 1 1/2 C WW pastry flour)
3/4 C Organic Cocoa (I guess it doesn’t have to be organic)
3/4 tsp salt
3/4 tsp Baking powder
1/4 tsp baking soda

Mix dry ingredients in Vita-Mix until even consistency, then fold into wet ingredients (not too much, or the gluten will start to form and you’ll get bread)

Just before you toss it into a pan, mix in 1/4 C Apple cider vinegar to activate the baking soda and add a bit more flavor!

Bake until fork comes out clean (about 30 minutes.) Let me know what you think!
