Half-Vegan Pizza!

Okay, so the recipe I’m giving only applies to the half I ate, the one without the cheese, though I have no doubt that the other side was excellent as well, and you could replicate it by following my recipe and then adding mozzarella to it. For the record, I was mostly a spectator on this (my friend cooked it), and it was absolutely delicious!

Crust:
3 1/2 C WW Pastry Flour (Or fresh milled soft white wheat, if you have the option)
1 Tbsp Salt
1 tsp cinnamon

Mix flour, cinnamon, and salt

1 C warm water
1 Tbsp yeast
1 Tsp sugar (or honey for you honey-friendly veg’s)

Let yeast proof in water and sugar. Then slowly pour yeasty water into flour and mix until solid then knead for 5 minutes (WW pastry flour needs extra love for the gluten to form)

Preheat oven to 350°-375°. Let rise until doubled. Let rise a second time to ensure the gluten has formed, then roll onto a baking stone. Bake for 5-10 minutes.

On crust, put:
2 Thinly sliced roma tomatoes
1 thinly sliced tomatilla
3 cloves minced garlic
1/2 jalapeño, minced
1 yellow pepper, sliced
1/4 white onion minced
swiss chard and mushrooms, as you like

Bake until veggies have roasted (about 20 min?) This was really tasty.
